Savory Southern Fried Turkey

  • 1 20lb turkey
  • 1 cup sea salt
  • 5 shallots (shaved)
  • 5 garlic cloves (crushed)
  • 1 bunch sage (chopped)
  • ½ bunch thyme
  • 2 each bay leaf
  • 3 tablespoons black peppercorns

Instructions:

  • Heat the chicken broth to a boil with all the ingredients to infuse
  • Remove from the heat and cool
  • Place the liquid into a large container, bag or clean bucket that can accommodate the turkey
  • Brine overnight

*This liquid can also be used to inject the turkey
