Haystack No Bake Cookies

These no-bake cookies are no joke — packing a whole lot of delicious in with the protein power of peanuts.

Ingredients | Amount |
White Chocolate Chips | 1 (11-oz.) pkg |
Chow Mein Noodles | 1 (5-oz.) can |
Salted dry roasted peanuts | 1 cup |
Dried cranberries | 3/4 cup |
Instructions:
- Melt the white chocolate chips in the microwave or in a double boiler on the stovetop until smooth.*
- Add the chow mein noodles, peanuts, and dried cranberries. Stir to mix well.
- Drop by rounded spoonfuls onto a baking sheet lined with parchment paper.
- Cool for at least one hour before removing the haystack cookies from the parchment paper.
*How To Melt White Chocolate
Stovetop — heat the white chocolate chips in a double boiler over gently simmering water, stirring until smooth.
Microwave — heat white chocolate chips in a microwave-safe bowl at medium power (50%) for 1 to 1 1/2 minutes. Stir until the bowl no longer feels warm. Continue heating at 15-30 second intervals, stirring until smooth.
