Peanut Butter Breakfast Bars

Peanut Butter Breakfast Bars are soft, chewy, are easy to make and are nutritious with oats, peanut butter and bananas. They’re simple with only 6-ingredients and make a great snack!

Serves 8

Ingredients Amount
Quick Cook Oats 2 cups
Ripe Bananas 2
Peanut butter 1/2 cup
Eggs 2
Maple Syrup* 1/4 cup
Baking Powder 1 tsp

 

Instructions:

  1. Preheat oven to 350 degrees and spray a 7 x 11 glass baking dish with nonstick spray.
  2. Blend oats in a food processor until ground. Add the rest of the ingredients to the food processor and blend until smooth. 
  3. Pour batter into the baking dish and bake for 20 minutes until a toothpick stuck into the center of the loaf comes out clean. Let cool before slicing.

*Syrup can be omitted for babies and toddlers if desired.
