Peanut Butter Pudding

In just 10 minutes, this ultimate comfort-food dessert is ready to serve.


1 1/2  cups skim milk
1/2  cup half and half
1/2  cup sugar
2 1/2  tablespoons cornstarch
2  tablespoons unsweetened cocoa
powder, sifted
1/2  teaspoon vanilla extract
1/3  cup creamy peanut butter
2  tablespoons lightly salted peanuts,


  1. Whisk together the milk, half and half, sugar, cornstarch, cocoa powder and vanilla extract in a medium saucepan. Cook, stirring, until the mixture is thick and bubbly, 6-7 minutes. Remove from the heat and whisk in the peanut butter until smooth. Evenly divide the pudding among 6 small bowls.
  2. Sprinkle the top of the puddings with the chopped peanuts. Serve warm or cover with plastic wrap and refrigerate until ready to serve.
