Air Fryer Chickpea & Peanut Falafel

16 1 oz falafel balls

Ingredients

E1 15 oz can of chickpeas, drained and rinsed
E1/3 cup of dry roasted peanuts
E1/4 cup of fresh parsley, chopped
E1/4 cup of chopped cilantro
E2 cloves of garlic
E1/2 cup of onion, small, diced
E1 tsp of cumin
E1/2 tsp of ground coriander
E1/2 tsp of smoked paprika
E1/2 tsp of kosher salt
E1 tbsp of peanut oil

Instructions

  1. Drain and rinse chickpeas. Then pat chickpeas dry with paper towels to remove excess moisture.
  2. In a food processor, combine peanuts and chickpeas. Pulse until crumbly. Add parsley, cilantro, garlic, onion, cumin, coriander, paprika, salt, flour, and lemon juice. Pulse again until combined but do not overmix.
  3. Scoop and roll the mixture into small falafel balls about 1 oz. each.
  4. Place falafel in the fridge for 15–20 minutes to firm up.
  5. Lightly brush falafel with peanut oil or spray lightly with cooking spray. Air fry in a single layer at 400 F for 10–12 minutes, flipping halfway through, until golden and crisp.
