Crunchy Peanut Waldorf Salad

This healthier version of the beloved salad is every bit as delicious as the original—but thanks to the addition of peanuts, has the added bonus of nutty crunch, along with the invaluable plant nutrients the peanuts provide.

Ingredients
1/3 cup of canola mayonnaise
1/4 cup of light sour cream
1 tbsp of lemon juice
1/2 tsp of salt
1/4 tsp of ground black pepper
12 oz of chicken breast, cut into 3/4-inch pieces cooked (about 2 ½ cups)
1 1/4 cups of red seedless grapes, halved
1 each of medium golden delicious apple, cut into 3/4-inch pieces
2 each of celery ribs, sliced
2 oz of lightly salted dry roasted peanuts
Instructions
- Combine the mayonnaise, sour cream, lemon juice, salt and pepper in a bowl. Combine the chicken, grapes, apple, celery and peanuts in a separate bowl. Add the mayonnaise mixture to the chicken mixture and toss well to coat.
