Flourless Blueberry Muffins
A fast and easy snack, made with five simple ingredients. In fact, you might already have them on-hand and ready to go!
2 each of bananas
1 cup of creamy peanut butter
2 each of eggs
1/2 tsp of baking powder
1 cup of blueberries
- Preheat oven to 350° F. Grease muffin pan.
- In a blender or food processor, combine bananas, peanut butter, eggs, and baking powder and blend until smooth. Fold in blueberries by hand.
- Pour mixture into muffin tin. Bake for 12-15 minutes.
- Store in an airtight container for 3 days.
