Peanut Butter Cottage Cheese Ice Cream

Peanut Butter Cup Ice Cream is rich, flavorful and full of peanut butter cups and creamy peanut butter! It’s a fun take on the cottage cheese ice cream trend.

E1 24 oz container of cottage cheese, full-fat
E1/2 cup of peanut butter
E1/4 cup of maple syrup, plus 2 tablespoons
E3 tbsp of peanuts, chopped


  1. Blend together the cottage cheese, maple syrup and peanut butter in a food processor or blender until smooth and creamy.
  2. Stir in the chopped peanuts and peanut butter cups.
  3. Place the mixture into a storage container or loaf pan and place in the freezer until firm - about 3-4 hours.
  4. When you're ready to serve, thaw for about 10 minutes for easy scooping.
