Peanut Chicken Bowls

These Peanut Chicken Bowls are packed with protein and fiber for the perfect dinner! Loaded with a rainbow of veggies, crunchy peanuts, garlic chicken and a delicious chili peanut lime sauce.

Ingredients
2 1/2 cups of cooked brown rice
2 1/2 cups of chicken breast, cooked and sliced
1 1/2 cups of carrots, sliced carrots
1 yellow bell pepper, thinly sliced
1 medium cucumber, thinly sliced
1 1/2 cups of peapods
1 1/2 cups of broccoli florets, steamed
1/2 cup of chopped cilantro
1/2 cup of chopped green onions
1/2 cup of peanuts
Peanut Sauce
1/2 cup of peanut butter, natural or microwaved regular peanut butter
2 tbsp of vinegar
2 tbsp of soy sauce
1 1/2 tbsp of lime juice
2 tbsp of sesame oil, toasted
1 tbsp of honey
2 tsp of fresh ginger, grated
1 1/2 tsp of garlic powder
1 tsp of chili paste
water, to thin
Instructions
- Cook rice and chicken if needed. Slice and chop all of the veggies.
- Whisk together all of the ingredients for the peanut sauce. If the sauce is too thick, whisk water into the mixture to get the desired consistency.
- In a bowl, layer your rice, chicken, veggies, peanuts and peanut sauce.
