Peanut Crusted Tofu

Ingredients
1 lb of extra firm tofu, drained and sliced
1/4 cup of soy sauce
3 tbsp of rice vinegar
1 tbsp of maple syrup
1 tsp of peanut oil
1 tbsp of fresh garlic, minced
1 tbsp of fresh ginger, minced
1 cup of peanut flour
4 eggs, beaten
1 cup of panko breadcrumbs
1 cup of chopped peanuts
1/2 tsp of kosher salt
Instructions
- Slice tofu and line baking sheet or trays with paper towels to drain excess liquid. Place tofu on tray, layer with parchment and place another tray on top to help press the tofu. After 30 minutes, press again to remove as much moisture as possible. Slice into 8 parts and then cut in half again to equal 16 pieces.
- Create a marinade by combining soy sauce, rice vinegar, maple syrup, peanut oil, garlic, and ginger. Place tofu in a baking dish, pour marinade over the tofu and cover. Let the tofu marinate for at least 2 hours or overnight.
- When ready to cook, prepare breading station using peanut flour, eggs and combine the panko bread crumbs with chopped peanuts. Remove tofu from marinade and dredge each slice in flour followed by eggs and finally the peanut panko mixture.
- Using an air fryer or convection heat, cook at 400 degrees for 8-10 minutes or until crust is golden. Serve immediately.
