Quick & Easy Peanut Butter Chicken (20-minute meal!)

This quick and easy peanut butter chicken recipe is sure to become a weeknight favorite! Repurpose the leftovers (if there even are any), into delicious meal prep bowls with some brown rice and crunchy, colorful fresh veggies..

Ingredients
1.5 lbs of boneless skinless chicken breasts
2 tbsp of olive oil, or avocado oil
1 tbsp of soy sauce
3/4 cup of peanut suace
Instructions
- Drizzle the oil of your choice in a large skillet set over medium-high heat. Add the diced chicken to the pan, and then pour the soy sauce over top. Sauté for about 10-12 minutes, until the chicken is fully cooked.
- Serve with brown rice and colorful sliced veggies. Garnish with chopped unsalted roasted peanuts, as desired.
