Roasted Cauliflower with Cumin-Citrus Peanut Sauce

Ingredients
Roasted Cauliflower
1 head of cauliflower, cored and cut into bite sized pieces
2 stems of green onions, cut into 2-inch pieces
3 tbsp of olive oil
1/2 tsp of salt
Cumin-Citrus Peanut Sauce
3 tbsp of creamy unsweetened peanut butter
1 tsp of water
1 tbsp of lemon juice
2 tbsp of orange juice
1 tsp of maple syrup
1/2 tsp of garlic, grated
1 clove of cumin
1/2 tsp of paprika
1/4 tsp of salt
2 tbsp of chives, chopped
Toppings
2 tbsp of sliced green onions
1/4 cup of crushed peanuts
Instructions
- Add the cauliflower to a sheet pan with the green onions, then drizzle the oil over the top. Add salt and pepper, then toss to combine. Add thyme and rosemary.
- Bake for 35-45 minutes, until soft and crisp. Toss once while the cauliflower cooks.
- While the cauliflower roasts, make the peanut sauce. Add all ingredients for the sauce to a small bowl and whisk to combine.
- Remove from the oven and remove the thyme and rosemary stems.
- Top with sliced green onion, chopped peanuts and the peanut sauce.
