Strawberry Shortcake Coated Peanuts

6 1/4 cups
Ingredients
1 oz of shortbread cookies
0.5 oz of freeze-dried strawberries
1/4 cup of white chocolate chips
1 tsp of peanut oil
1 cup of roasted peanuts, lightly salted
Instructions
- In a small dish, combine shortbread cookies and freeze-dried strawberries. Crush into smaller pieces for sprinkling and set aside.
- Line a small baking sheet with parchment paper and set aside.
- In a small microwave safe bowl, melt white chocolate chips in the microwave for 1 minute. Remove, stir and add 1 tsp peanut oil. Immediately add roasted peanuts and combine until the peanuts are well coated with the white chocolate.
- Spread peanut mixture on to parchment paper and sprinkle with strawberry shortcake crumble. Place in the refrigerator or freezer for at least 20 minutes before serving.
