Strawberry Shortcake Coated Peanuts

6 1/4 cups

Ingredients

E1 oz of shortbread cookies
E0.5 oz of freeze-dried strawberries
E1/4 cup of white chocolate chips
E1 tsp of peanut oil
E1 cup of roasted peanuts, lightly salted

Instructions

  1. In a small dish, combine shortbread cookies and freeze-dried strawberries. Crush into smaller pieces for sprinkling and set aside.
  2. Line a small baking sheet with parchment paper and set aside.
  3. In a small microwave safe bowl, melt white chocolate chips in the microwave for 1 minute. Remove, stir and add 1 tsp peanut oil. Immediately add roasted peanuts and combine until the peanuts are well coated with the white chocolate.
  4. Spread peanut mixture on to parchment paper and sprinkle with strawberry shortcake crumble. Place in the refrigerator or freezer for at least 20 minutes before serving.
