In this case study, authors looked at the effects of a plant-based diet (lacto-ovo-semi-vegetarian) on non-alcoholic fatty acid liver disease (NAFLD) in a 44-year old obese man with ulcerative colitis and metabolic syndrome.

Key Findings: When the man was placed on the plant-based diet, he lost approximately 10 lbs, and his triglyceride and total cholesterol levels decreased to normal ranges. There was also dramatic improvement in the parameters of NAFLD, with a decrease in liver enlargement. Authors conclude that the plant-based diet resulted in a dramatic improvement in this man's health parameters.
