Roasted Cauliflower with Cumin-Citrus Peanut Sauce

Ingredients Amount
Cauliflower, cored and cut into bite sized pieces 1 large head
Green onions, cut into 2-inch pieces 2 onions
Olive Oil 3 tbsp
Salt 1/2 tsp

Other

Pepper to taste
A few sprigs fresh thyme
A few sprigs fresh rosemary

Cumin-Citrus Peanut Sauce

Ingredients Amount
Creamy Unsweetened Peanut Butter 3 tbsp
Water 1 tsp
Lemon Juice 1 tbsp
Orange Juice 2 tbsp
Maple Syrup 1 tsp
Grated Garlic 1/2 tsp
Cumin 1 clove
Paprika 1/2 tsp
Salt 1/4 tsp
Chopped Chives (optional) 2 tbsp

 

Toppings

Ingredients Amount
Sliced Green Onions 2 tbsp
Crushed Peanuts 1/4 cup

 

Instructions:

  1. Preheat the oven to 425.
  2. Add the cauliflower to a sheet pan with the green onions, then drizzle the oil over the top. Add salt and pepper, then toss to combine. Add thyme and rosemary.
  3. Bake for 35-45 minutes, until soft and crisp. Toss once while the cauliflower cooks.
  4. While the cauliflower roasts, make the peanut sauce. Add all ingredients for the sauce to a small bowl and whisk to combine. Remove from the oven and remove the thyme and rosemary stems.
  5. Top with sliced green onion, chopped peanuts and the peanut sauce.
