Roasted Cauliflower with Cumin-Citrus Peanut Sauce

Green onions, cut into 2-inch pieces | 2 onions |

A few sprigs fresh thyme
A few sprigs fresh rosemary
Cumin-Citrus Peanut Sauce
Ingredients | Amount |
Creamy Unsweetened Peanut Butter | 3 tbsp |
Water | 1 tsp |
Lemon Juice | 1 tbsp |
Orange Juice | 2 tbsp |
Maple Syrup | 1 tsp |
Grated Garlic | 1/2 tsp |
Cumin | 1 clove |
Paprika | 1/2 tsp |
Salt | 1/4 tsp |
Chopped Chives (optional) | 2 tbsp |
Toppings
Ingredients | Amount |
Sliced Green Onions | 2 tbsp |
Crushed Peanuts | 1/4 cup |
Instructions:
- Preheat the oven to 425.
- Add the cauliflower to a sheet pan with the green onions, then drizzle the oil over the top. Add salt and pepper, then toss to combine. Add thyme and rosemary.
- Bake for 35-45 minutes, until soft and crisp. Toss once while the cauliflower cooks.
- While the cauliflower roasts, make the peanut sauce. Add all ingredients for the sauce to a small bowl and whisk to combine. Remove from the oven and remove the thyme and rosemary stems.
- Top with sliced green onion, chopped peanuts and the peanut sauce.
