Savory Southern Fried Turkey

- 1 20lb turkey
- 1 cup sea salt
- 5 shallots (shaved)
- 5 garlic cloves (crushed)
- 1 bunch sage (chopped)
- ½ bunch thyme
- 2 each bay leaf
- 3 tablespoons black peppercorns

Instructions:
- Heat the chicken broth to a boil with all the ingredients to infuse
- Remove from the heat and cool
- Place the liquid into a large container, bag or clean bucket that can accommodate the turkey
- Brine overnight
*This liquid can also be used to inject the turkey
