The growing recognition of health benefits associated with dietary antioxidants and fibre has boosted the demand for antioxidants and fibre-enriched foods, including peanut skin (PS).
Key Findings: Our study found that PS contained 70 % dietary fibre, with 95 % belonging to insoluble dietary fibre (IDF). Glucose and arabinose are the most abundant monosaccharides in the IDF, indicating the presence of cellulose and hemicellulose. Additionally, micronisation was applied in this study to explore the structural changes brought to PS and their consequent impacts on some physicochemical properties. Results showed that micronisation could enhance the release rate and amount of antioxidants during gastrointestinal digestion by increasing its specific surface area. This process also decreased the branching structure of IDF, resulting in reduced hydration properties. Overall, our study not only demonstrated the potential of PS in functional food development, but also provided valuable insights into the effective application of micronisation for efficient PS processing.
